Easy creamy lemon garlic mushroom pasta
Description
In this recipe, sliced mushrooms are fried in olive oil until golden and their moisture evaporates. Garlic is added and sautéed briefly, then chili flakes and fresh herbs like parsley and chives provide aromatic complexity. Lemon juice adds brightness to the mixture, which is combined with cream and simmered until slightly thickened. Seasoning with salt and black pepper rounds out the flavors.
The cooked pasta is then tossed in the sauce, with reserved cooking water added as needed to achieve a sauce that coats but does not overwhelm. A final sprinkle of grated Parmesan cheese adds savory depth and a slightly nutty finish. The resulting pasta has a creamy texture with bits of tender mushrooms and fresh herb flavor punctuated by lemon and mild heat.
This dish works well as a quick vegetarian meal and pairs nicely with a simple green salad or steamed vegetables. The creamy sauce can be adjusted to personal preference by adding more or less cream, and it holds well if gently reheated.
Ingredients
- 2 tbsp olive oil
- 500 g/1lb mushrooms sliced
- 2-3 cloves garlic finely chopped
- 1-2 cups cream (I often only use 1 cup but if I want it a little saucier, will add a bit more)
- 2-3 tsp lemon juice
- 2 tbsp parsley finely chopped, fresh
- 2 tbsp chives finely chopped
- 1 tsp chili flakes or to taste
- ½ cup Parmesan Cheese grated
- salt to taste
- black pepper to taste
- 500 g/1lb pasta cooked (reserve some of the cooking water)
Instructions
- Heat the olive oil in a large pan then fry the mushrooms until golden brown. The mushrooms will release some moisture but allow the liquid to cook off for a few minutes.
- Add the garlic and fry for another minute then add the chilli flakes and herbs. Squeeze in the lemon juice.
- Pour in the cream then allow to simmer until the sauce has thickened slightly. Season with salt and black pepper.
- Toss the pasta in the sauce, adding reserved pasta cooking water as needed. You want the pasta to be coated in the sauce and for the sauce to not be too thick.
- Sprinkle with Parmesan and serve.
