Description

This mashed potatoes recipe uses russet potatoes peeled and cut into cubes for even cooking. The potatoes are boiled in salted water until soft but not falling apart, ensuring the right texture. After draining, the hot potatoes stay covered briefly to retain heat while butter, half-and-half, and sour cream are added, melting and enriching the mixture.

Mixing with an electric hand mixer whips the potatoes until mostly smooth with a creamy texture, balancing fluffiness and moisture. Salt is added to taste, adjusting the seasoning.

Ingredients

  • 5 lbs russet potato whole
  • 2 tbsp salt
  • 1 3/4 cup half and half
  • 1 butter unsalted, stick
  • 1/2 cup sour cream
  • salt to taste

Instructions

  1. Peel russet potatoes and cut into 1" cubes
  2. Place potatoes in a large stock pot. Fill the pot with cold water until the potatoes are fully submerged and the top layer is covered in at least 2" of water. Pour 2 tbsp of salt into the pot.
  3. Place the pot on the stove and bring the water to a boil. Once boiling reduce the heat to a simmer and cover the pot
  4. Allow the potatoes to simmer for at least 10 minutes - potatoes should be soft when pierced with a fork.
  5. Remove the pot from the stove and drain the water. Immediately return the hot potatoes to the stockpot and cover the pot to retain the heat.
  6. Place a stick of butter, half and half and sour cream in the warm pot. Cover the pot and wait a few minutes for the butter to melt
  7. Using an electric hand mixer, mix the potatoes until almost fully whipped. Best if served immediately!

Notes

  • For make-ahead, cool mashed potatoes fully, then top with butter and milk before refrigerating.
  • Reheat gently to preserve creamy texture.
