Description

The recipe begins by pressing extra firm tofu to remove excess moisture, then slicing it into portions. The tofu slices are dipped in plant-based milk and coated in panko crumbs to create a crispy outer crust once baked. Baking at a moderate temperature crisps the tofu evenly. After baking, the tofu is brushed with warmed buffalo sauce to add bold, spicy flavor. Layering the tofu with fresh tomato and crunchy sprouts adds freshness and moisture balance within the sandwich.

Ingredients

  • 1 extra firm tofu ~16-ounce block
  • 2 cups panko breadcrumbs
  • ½ cup plant-based milk unsweetened, plain
  • tomato sliced
  • buffalo sauce
  • whole wheat bread
  • sprouts

Instructions

  1. Preheat oven to 350 degrees F/176 degrees C.
  2. While oven is preheating, slice tofu into 4 parts. Press and squeeze the water out of tofu using a clean non-fuzzy kitchen towel or paper towels.
  3. Place plant-based milk in a bowl, and Panko-style crumbs on a plate.
  4. Dip tofu into the plant-based milk, and roll on the plate of crumbs. Push the crumbs into tofu.
  5. Place the tofu on a nonstick baking sheet, and cook for 15 minutes. After 15 minutes, flip and cook for 15 more minutes.
  6. Pour the buffalo sauce in a bowl and heat in the microwave for 30 seconds or until warmed. Brush the sauce onto the tofu pieces.
  7. Place tofu slice on bread and top with tomato and sprouts.
  8. Note: If the crumbs are having a hard time sticking, add more sauce.

Notes

  • Adjust buffalo sauce heat by adding melted vegan butter to mellow or cayenne pepper to intensify.
  • Freezing and thawing tofu before pressing results in a firmer, chewier texture.
  • Toast sandwich bread to prevent sogginess from the sauce and vegetables.
