Easy Crockpot Chicken Noodle Soup
Description
This soup starts by pureeing onion with water to incorporate additional flavor and texture. All ingredients except noodles are combined in a crockpot and cooked on high for 3 to 4 hours. Once the chicken is fully cooked, it is shredded and returned to the pot. The egg noodles are cooked according to package directions separately and then stirred into the soup just before serving.
The slow cooking melds the flavors of the vegetables and chicken, creating a gentle broth enriched by bouillon granules and savory depth from the shredded meat. The separate cooking of noodles allows them to retain a tender but firm bite, preventing overcooking in the slow cooker.
Extra liquid can be added if needed, using chicken broth or water, and the soup can be seasoned further with additional bouillon to taste. This recipe makes a substantial and warming meal suitable for cooler days or when comfort food is desired.
Ingredients
- 1 large onion
- 6 ½ cups water
- 1 teaspoon salt
- 4 chicken breast boneless, skinless
- 1 cup carrot thinly sliced
- ½ cup celery finely diced
- 2 Tablespoons chicken bouillon granules
- 8 ounces egg noodles
Instructions
- Peel onion and chop into chunks. Combine ½ cup of water and onion in a food processor or blender. Puree for 30 seconds.
- In a large crock pot combine all the ingredients except noodles.
- Cook on HIGH for 3 to 4 hours, or until the chicken is fully cooked. Remove the chicken and shred it with two forks. Cook the noodles according to the package directions.
- Add the shredded chicken and cooked noodles back to the crock pot. Stir and serve. If you need to add more liquid to the soup, add a can of Swanson's chicken broth or water and season with more of the chicken bouillon granules to taste.
