Easy Crust-less Spinach and Feta Pie

This crust-less spinach and feta pie blends thawed, well-drained spinach with scallions, fresh dill, and parsley. Feta cheese and Asiago cheese add salty richness within a batter of whole wheat flour, baking powder, milk, eggs, and olive oil. The pie is baked until set and lightly golden, creating a soft, savory dish that highlights the interplay of fresh herbs and creamy cheese without a heavy crust.

Description

The Easy Crust-less Spinach and Feta Pie combines drained frozen spinach with aromatic scallions and fresh herbs like dill and parsley to bring brightness and herbal flavor. Feta cheese is crumbled in for salty tang, complemented by Asiago or Parmesan cheese for added depth. These ingredients are mixed and spooned into a pie dish prepared with a light coating of cooking spray.

The batter comprises white whole wheat flour sifted with baking powder, then combined with fat-free milk, olive oil, beaten eggs, kosher salt, and freshly cracked black pepper. The wet ingredients bind the greens and cheese, creating a custard-like filling. Baking at 400°F for about half an hour results in a firm, sliceable pie with a lightly browned top. Letting the pie rest after baking helps it set further and allows easier slicing.

The absence of a crust lets the fresh spinach and cheeses stand out. The texture is soft yet structured, making it suitable for brunch, lunch, or a light dinner. Portions are cut into six slices to serve.
