Easy Curried Carrots

Ingredients

Servings
  • 2 tablespoons olive or another vegetable oil
  • 2 medium onion thinly sliced
  • 1-2 tablespoons garlic minced
  • 5 large carrot cut into thin coins
  • 2 teaspoons curry powder
  • 1 large apple granny smith or another tart apple, peeled and grated
  • cup water or vegetable or chicken broth
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large saucepan, heat oil until it shimmers or a drop of water flicked in it dances.
  2. Add onions and cook until starting to become tender, about 5 minutes.
  3. Add garlic, carrots and curry.
  4. Cover and cook over medium heat for 5 minutes.
  5. Stir in apple and water or broth.
  6. Cover and simmer for 7 minutes or until carrots are tender but still a little crunchy!
  7. Add salt and pepper to taste. Serve immediately. Enjoy every bite
