  • 2 tablespoons extra virgin olive oil
  • 3 medium bell pepper thinly sliced
  • 1 large onion thinly sliced
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons cumin ground
  • 1 teaspoon oregano dried
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspon salt
  • 1/4 teaspoon black pepper freshly ground
  • cayenne pepper optional, pinch
  • 1/2 lime (optional)

Instructions

  1. Heat the oil in a large skillet set over medium heat. Combine the seasonings in a small bowl and mix well.
  2. Add the peppers and onions to the skillet. Sprinkle the seasoning over the vegetables. Saute for 4 to 8 minutes, stirring frequently, until the veggies are crisp-tender, or softened to your liking. Squeeze the lime juice over the veggies and toss to combine, if desired. Remove from the heat and serve immediately.

Notes

  • STORAGE: Store leftover fajita veggies in a sealed container in the refrigerator for up to 2 days.
