  • 2 cups basmati rice cooked
  • 1 tablespoon olive oil
  • 6 Bacon cut into 1/2 inch pieces, strips
  • ½ pound smoked pork or beef sausage sliced into 1/4 inch rounds
  • 1 15 oz black beans do not drain
  • 1 cup chicken broth
  • 2 teaspoons garlic powder
  • 3 bay leaf
  • 1 teaspoon oregano dried
  • salt to taste

Instructions

  1. Cook the rice however desired.
  2. Heat a large pot over medium heat. Add olive oil and heat.
  3. Add the bacon and sausage and sauté until brown and crispy, about 4 minutes.
  4. Add the can of black beans and cook for 1 more minute.
  5. Add the chicken broth, garlic powder, bay leaves, oregano, and salt. Bring to a boil and then reduce heat to low.
  6. Simmer for 15 minutes or until desired thickness.
  7. Serve hot over rice.
