Description
Easy Fried Rice, Chinese Style combines long-grain cooked rice, preferably Jasmine, with garlic sautéed in neutral oil to create a fragrant base. The rice is tossed in the wok with sesame oil, soy sauce, Maggi seasoning, salt, and white pepper to coat every grain evenly. Adding thawed peas, carrots, and diced cooked ham heats through the vegetables and meat, integrating their sweetness and savoriness into the dish.
Lightly beaten eggs seasoned and scrambled into small bits provide tender protein pieces dispersed throughout. Finally, sliced green onions add freshness and a mild crunch. The stir-fry method keeps the rice separate and fluffy, avoiding clumping, while distributing flavors thoroughly.
This fried rice serves well alongside multiple dishes or as a quick standalone meal. Leftovers store well refrigerated for several days, maintaining the flavors and texture suitable for reheating.
Ingredients
- 3 TB neutral cooking oil such as peanut oil or vegetable oil, generic cooking oil
- 4 cloves garlic minced
- 4 ½ cups long grain rice such as Jasmine, fully cooked and cooled*
- 2 TB sesame oil Asian
- 1 tsp maggi seasoning sauce
- 2 TB soy sauce regular
- ½ tsp table salt plus more to taste
- ½ tsp white pepper plus more to taste
- ½ cup pea if frozen, defrost at room temp
- ½ cup carrot if frozen, defrost at room temp
- 1 ½ cups ham cooked, diced*
- 2 large egg lightly beaten with 1/8 tsp salt and scrambled into small bits
- 2 green onion thinly sliced, stalks
Instructions
- In a large wok or extra-large pan, heat the oil until hot. Add the garlic and stir for 30 seconds or until fragrant.
- Add the rice, and stir well. Add the sesame oil, Maggi sauce, soy sauce, 1/2 tsp salt, and 1/2 tsp white pepper. Stir seasonings into the rice to coat thoroughly.
- Add the peas/carrots and diced ham. Stir to combine and heat through. Add the green onions and scrambled eggs. Stir to incorporate and heat through.
- If desired, add a bit more salt and white pepper to taste. Serve warm. Store any leftovers in an airtight container in the fridge for 3-4 days.
