Easy Garlic Broccolini
Description
This straightforward recipe starts by trimming and halving broccolini stalks. The broccolini is blanched in boiling water for two minutes, then shocked in cold water to halt cooking, maintaining firmness and vibrant color.
Next, garlic slices are gently sautéed in extra virgin olive oil until golden, infusing the oil with flavor. The drained broccolini is added to the pan, seasoned simply with kosher salt and an optional pinch of red pepper flakes for mild heat, and cooked for about one minute until heated through.
The result is a tender yet crisp vegetable with a fragrant garlic aroma. This preparation suits as a quick, flavorful accompaniment to mains, relying on minimal ingredients and short cooking time to highlight broccolini’s natural qualities with a touch of savory spice when included.
Ingredients
- 2 broccolini bunches
- 6 cloves garlic sliced thin, peeled
- 1 1/2 tbsp extra virgin olive oil
- kosher salt
- pinch red pepper flakes (optional)
Instructions
- Trim about 1 1/2 inches off broccolini stems and discard. Slice the broccolini in half lengthwise.
- Bring pot of water to a boil. When boiling, add broccolini and cook 2 minutes. Quickly drain and run under cold water to stop it from cooking.
- Heat a large sauté pan over medium-high heat. Add the oil and garlic and cook until golden, about 1 minute. Add the drained broccolini, season with kosher salt to taste and red pepper flakes (optional), and cook 1 minute, or until heated through.
