Easy garlic cheese pasta
Description
The recipe begins with melting butter and frying crushed garlic until aromatic, then whisking in flour to create a roux. Milk and cream are slowly added to form a smooth, simmered sauce. Turning off the heat before adding cheese and fresh parsley prevents the cheese from overcooking while melting it evenly. A squeeze of lemon juice adds subtle acidity to balance the richness. The cooked pasta is folded into the sauce with reserved pasta water to reach the desired consistency.

Ingredients
- 2 tablespoons butter
- 3-4 garlic crushed, cloves
- 1 flour heaped tablespoon
- 1-1½ cups milk
- ½ cup cream alternatively use all milk
- 2 cups cheese I used 1 cup mature cheddar and ½ cup each of mozzarella and Parmesan, grated, of your choice

- 500 g pasta cooked (reserve 1 cup of the cooking water, of your choice
Instructions
- To make the sauce, melt the butter in a large, deep frying pan.
- Add the garlic and fry until fragrant then add the flour. Whisk in the milk until a smooth sauce forms then add the cream (if using). Turn down the heat and allow to simmer for 5 minutes.
- Turn the heat off then add the cheese, parsley, lemon and season to taste.
- Add the cooked pasta and a little of the cooking water, stirring to coat the pasta. Add more pasta water if necessary.
- Serve immediately.
