  • 1 bottle ginger beer
  • 1 tbs honey

Instructions

  1. In a food processor combine the fresh pineapple, honey, half of the lime juice, and mint together.
  2. Strain the pulp out with a mesh strainer.
  3. Fill two glasses with ice. Divide the juice from the blender into the glasses.
  4. Add in the remaining freshly squeezed lime juice and ginger beer.
  5. Top it with fresh mint and enjoy!

Notes

  • You can substitute pineapple juice for fresh pineapple, but omit honey if the juice is sweet enough.
  • Straining the pineapple mixture is optional; leaving pulp adds texture which some may prefer.
  • Do not substitute ginger ale for ginger beer, as it lacks the spicy ginger flavor essential to the drink.
