Easy Glazed Carrots

Easy Glazed Carrots are cooked tender-crisp by boiling, then finished in a skillet with butter, brown sugar, lemon juice, and cinnamon to create a lightly sweet and slightly tangy glaze. This simple side dish is seasoned with salt and pepper and optionally garnished with fresh parsley.

Description

The Easy Glazed Carrots recipe begins by boiling peeled and cut carrots in water until they reach a tender-crisp texture. After draining, the carrots are returned to the pan where butter, brown sugar, lemon juice, and cinnamon are added. The mixture is cooked over medium heat until the glaze thickens and coats the carrots, providing a subtle sweetness with a hint of citrus and warm spice from the cinnamon. Salt and pepper adjust the seasoning to taste. Fresh parsley may be sprinkled on top for color and a mild herbal note. This dish offers a flavorful yet uncomplicated way to prepare carrots, balancing natural vegetable sweetness with buttery and sweet glaze elements, suitable as a side for a variety of meals.

Ingredients

Servings
  • 1 pound carrot peeled & cut into sticks or rounds
  • 3 tablespoons butter
  • 1/4 cup brown sugar
  • 1 teaspoon lemon juice
  • 1 pinch cinnamon
  • salt to taste
  • black pepper to taste
  • 1 tablespoon parsley optional, chopped, fresh

Instructions

  1. Add the carrots to a deep skillet or saucepan. Cover them with water and boil over high heat until tender-crisp. Check after 5 minutes since timing will really depend on how thick the carrots are cut. Keep in mind the carrots will be cooked for a little longer in the next step, so once they're close to desired doneness, drain the water, returning the carrots to the pan.
  2. Add the butter, brown sugar, lemon juice, and cinnamon to the pan. Cook over medium heat (or medium-low if it's too hot) for about 5 minutes, or until the sauce has thickened a little bit and the carrots are cooked to your liking.
  3. Season with salt & pepper as needed. Serve immediately with some parsley sprinkled over top if you wish.
