This goat cheese flatbread is the perfect appetizer or snack! Think creamy goat cheese, sweet blueberries, and peppery arugula on a crispy naan flatbread with a drizzle of honey – it's the ultimate fruity, savory, and tangy combination.

- 6 mini flatbreads
- 2 tsp olive oil
- ½ an onion
- ¼ tsp salt
- 1 tbsp honey plus more for drizzling
- 4 oz cream cheese
- 4 oz honey goat cheese
- fresh thyme
- 1 cup fresh blueberries
- 1 cup fresh arugula
Instructions
- Start by preheating your oven to 350 °F.
- Slice the onion into thin strips. Add them to a skillet with olive oil. Cook for 2-3 minutes over medium-low heat until they turn translucent.
- Add salt and a tablespoon of honey, and give it a good stir. Once fully coated, remove the skillet from the heat.
- Spread a layer of cream cheese over each naan bread and place them on a baking pan lined with a baking sheet or parchment paper. Divide the sweet caramelized onions evenly among the flatbreads. Sprinkle fresh thyme leaves over each bread. Arrange fresh blueberries on top of the flatbread however you like. Just ensure to leave spaces between each blueberry. Crumble honey goat cheese into bite-sized pieces and sprinkle them on each bread.
- Place the baking sheet pan in the preheated oven and bake for about 10 minutes, or until the blueberries start to burst.
- Remove the flatbreads from the oven and add a handful of fresh arugula to each bread. Drizzle with a little extra honey or balsamic glaze.
