Strawberry Salad with Goat Cheese

Ingredients

  • 6 cups spring mix
  • 1 cup strawberries cut into quarters
  • 2 Persian cucumbers sliced
  • ¼ red onion thinly sliced
  • cup pistachios roasted and unsalted
  • 2 oz goat cheese crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic glaze

Instructions

  1. Place the spring mix in a large shallow bowl. Add in the strawberries.
  2. Top with the cucumbers and sliced red onion.
  3. Add the pistachios and goat cheese to the salad.
  4. When you're ready to serve, drizzle the olive oil and balsamic glaze on the salad and gently toss it.

Notes

  • You can use spinach or arugula instead of spring mix. 
  • Instead of pistachios, you can use walnuts, pecans or pine nuts. 
  • Add grilled chicken to the salad to make it a whole meal. 
  • To make this salad heartier, add farro, orzo, freekeh or bulgur. 
  • Opt for ripe, juicy strawberries and fresh spring mix to enhance the flavor and texture of your salad recipe.
  • Uniform slices ensure every bite has the perfect balance of sweetness, creaminess, and crunch.
