Easy Ham and Egg Cups come together quickly requiring just two ingredients and a few simple seasonings. They are perfect for breakfast or brunch! Each egg comes with its own little cup of baked ham. Serve with toast and dip into the yolk or in between an English muffin.

Ingredients
- 6 lices deli ham
- 6 large eggs
- cooking spray
- salt
- pepper
- green onion for garnish, if desired
Instructions
- Preheat your oven to 400 degrees.
- Lightly coat muffin cups with cooking spray. Fit 1 slice of ham into each muffin cup as best you can. The ham will not fit perfectly and some of your egg may run outside the ham into the cup. This is ok.
- Crack 1 egg into each cup.
- Bake in middle of your oven until whites are cooked but yolks are as you like, between 12-15 minutes. Sprinkle salt and pepper on each egg before serving if needed. Remove cups carefully. Sprinkle with chopped green onions if desired. Serve immediately. Enjoy!
Notes
- Placing the Ham in the Cups. Don’t worry if the ham doesn’t perfectly fit in the muffin tin. Simply fit it in the best you can. The weight of the eggs and filling will help smooth it out, and if some of the egg mixture spills over it is fine.
- Doubling the Recipe. You can easily double or triple this recipe.
- Thickness of the Ham. Standard deli ham thickness is ideal for this recipe. You don’t want the ham so thin that it doesn’t hold up to the eggs. If you're working with ham that's a bit thinner I suggest using more than one slice.
- Greasing the Pan. Don't skip this step! Cooking spray makes quick work of greasing the muffing pan and is my preferred method, but you could also brush it with butter, olive oil, or other vegetable oil.
- Seasoning Your Egg Cups. Remember that ham has salt in it so you may or may not need to add more salt. The decision is always up to you!
