Easy healthy zucchini bread
Description
This zucchini bread uses oat flour combined with baking powder and a blend of spices including cinnamon, ginger, nutmeg, and a pinch of cloves. Brown sugar gives sweetness, balanced by coconut oil for moisture and richness. The grated zucchini tightly packed into the batter supplies moisture and subtle vegetable notes, keeping the bread tender.
The batter is mixed until combined, then transferred to a loaf pan and baked at moderate temperature until a skewer comes out clean, indicating doneness. Upon cooling, the loaf slices easily and retains a moist texture due to the zucchini and oil.
This bread is suitable for those looking for a moist, gently spiced quick bread with a vegetable component. It can be served at breakfast or as a snack. Optional mix-ins like chocolate chips or chopped nuts can be added to vary texture and flavor.
Allow the bread to cool completely before slicing to maintain crumb structure. Using oat flour provides a different texture compared to wheat flour, making this version slightly denser but still tender.
