Description
Easy Homemade Granola is made from a base of rolled oats, coconut flakes, various chopped nuts, seeds, and spices like cinnamon and pumpkin pie spice. A sweetener such as maple syrup or honey combined with vegetable oil binds the ingredients and aids browning. The mixture is spread on a parchment-lined pan and baked until golden, encouraging a crispy texture without burning. After baking, dried fruit such as raisins or cranberries is stirred in to add chewiness.
The granola's texture is a balance between crisp clusters and a slight chew from the nuts and dried fruit. Pressing the mixture with a spatula before cooling can create larger chunks for more texture variation. Ingredients
- 3 cups rolled oats
- 1 ¼ cup coconut flakes
- 1 ¼ cup nuts cashews, pecans, walnuts or almonds, chopped
- ⅓ cup seeds pumpkin or sunflower
- ¼ cup Flax Seed optional, ground
- ½ cup maple syrup or honey
- ½ teaspoon salt
- ⅓ cup vegetable oil
- 1 ½ teaspoons cinnamon
- ½ teaspoon pumpkin pie spice or apple pie spice
- 1 cup raisins or dried cranberries or blueberries
Instructions
- Preheat oven to 300°F. Line a large pan with parchment paper.
- Combine all ingredients except raisins/cranberries in a large bowl. Mix well.
- Spread onto prepared pan and bake 30-40 minutes or until golden.
- Remove from the oven and stir in raisins. Cool completely on the pan.
Notes
- Stir dried fruit into the granola while the mixture is still warm to distribute them evenly.
- Press the granola mixture with a spatula before cooling for larger, chunkier pieces.
- This granola can be served as a snack, cereal with milk or yogurt, or sprinkled over oatmeal.
- Makes approximately 6 cups, good for multiple servings.
