Description
Easy Homemade Meatloaf features a mix of 90-92% lean ground beef combined with finely chopped onion, minced garlic, fresh parsley, and seasoning including Italian herbs, smoked paprika, and salt and pepper. Panko breadcrumbs soaked in milk help hold the loaf together while keeping it moist. Eggs are added as a binder to give the loaf structure.
The mixture is carefully combined by hand and pressed evenly into a parchment-lined loaf pan for even cooking and easy removal. It bakes at 375°F for 40-50 minutes until cooked through. During baking, a glaze made of ketchup, Dijon mustard, honey, garlic powder, onion powder, and vinegar is prepared and spread on top to add a sweet and tangy finish.
This meatloaf yields a tender texture with a flavorful crust from the glaze. It serves well sliced for dinner and pairs nicely with classic sides. Substitutions like ground turkey or chicken can be used, and oats or crackers can replace breadcrumbs.
Leftovers keep well refrigerated up to five days or can be frozen up to three months for convenience.
Ingredients
For the Meatloaf
- 2 pounds ground beef use the leanest ground beef you can find, 90-92% lean
- 1 Medium white onion finely chopped, or yellow onion
- 2 Large egg
- 2 garlic minced, cloves
- 3 tablespoons ketchup sugar-free
- 3 tablespoons parsley chopped, fresh
- ¾ Cup panko breadcrumbs
- ⅓ Cup milk
- 1½ teaspoon kosher salt or to taste
- 1½ teaspoon Italian seasoning or dried oregano
- ¼ teaspoon black pepper fresh ground
- ½ teaspoon smoked paprika
- ¾ Cup ketchup sugar-free
- 1 tablespoon Dijon mustard
- 1 tablespoon honey raw
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon white wine vinegar
- ¼ teaspoon black pepper fresh ground
- ¼ teaspoon salt
To Garnish
- 1 tablespoon parsley freshly chopped
Instructions
- Preheat the oven to 375° F and line a 9x5-inch loaf pan with parchment paper, leaving about an inch of overhang on both sides. This will help to easily remove the meatloaf from the pan.
- In a large mixing bowl, use clean hands to combine the ingredients for the meatloaf. (these are 2 pounds 90-92% Lean Ground Beef, 1 Medium White or Yellow Onion- chopped, 2 Large Eggs, 2 Garlic Cloves, 3 tablespoons Sugar-free ketchup, 3 tablespoons Chopped Fresh Parsley, ¾ Cup Panko Breadcrumbs, ⅓ Cup Milk , 1½ teaspoon Kosher Salt, 1½ teaspoon Italian Seasoning or Dried Oregano, ¼ teaspoon Fresh Ground Black Pepper, and ½ teaspoon Smoked Paprika). Mix until well combined.
- Transfer the meat mixture to the prepared loaf pan, pressing to shape it to the inside of the pan making sure there are any air pockets left.
- Bake the meatloaf in the preheated oven for 40-50 minutes.
- While the meatloaf is baking, prepare the glaze. In a small bowl, combine the ingredients for the glaze (¾ Cup Sugar-free ketchup, 1 tablespoon Dijon Mustard, 1 tablespoon Raw Honey, 1 teaspoon Garlic Powder, ½ teaspoon Onion Powder, 1 teaspoon White Wine Vinegar, ¼ teaspoon Fresh Ground Black Pepper , and ¼ teaspoon Salt , and stir to combine. Pour the glaze over the top of the meatloaf and spread to evenly distribute it.
- Return the meatloaf to the oven and bake for an additional 15-20 minutes, or until the glaze is caramelized but not burnt. Rest for 10 minutes, then use the overhanging parchment paper to remove the meatloaf from the pan.
- Slice the meatloaf, and garnish with 1 tablespoon Freshly Chopped Parsley. Enjoy!
Notes
- Ground turkey or chicken can replace beef for a lighter version.
- Quick oats or crushed wheat crackers can be used instead of panko breadcrumbs.
- Store leftovers in the refrigerator up to five days or freeze for up to three months.
- One serving size is considered one slice of meatloaf.
