Easy Homemade Meatloaf

This homemade meatloaf combines lean ground beef, fresh onion, garlic, herbs, and seasonings with panko breadcrumbs and milk for binding. It's baked in a loaf pan, then topped with a tangy glaze of ketchup, Dijon mustard, honey, and vinegar. The result is a moist, flavorful meatloaf with a balanced savory glaze and a tender but structured crumb.

Description

Easy Homemade Meatloaf features a mix of 90-92% lean ground beef combined with finely chopped onion, minced garlic, fresh parsley, and seasoning including Italian herbs, smoked paprika, and salt and pepper. Panko breadcrumbs soaked in milk help hold the loaf together while keeping it moist. Eggs are added as a binder to give the loaf structure.

The mixture is carefully combined by hand and pressed evenly into a parchment-lined loaf pan for even cooking and easy removal. It bakes at 375°F for 40-50 minutes until cooked through. During baking, a glaze made of ketchup, Dijon mustard, honey, garlic powder, onion powder, and vinegar is prepared and spread on top to add a sweet and tangy finish.

This meatloaf yields a tender texture with a flavorful crust from the glaze. It serves well sliced for dinner and pairs nicely with classic sides. Substitutions like ground turkey or chicken can be used, and oats or crackers can replace breadcrumbs.

Leftovers keep well refrigerated up to five days or can be frozen up to three months for convenience.
