This Easy Homemade Salsa blends canned whole tomatoes, ROTEL, onion, garlic, jalapeño, cilantro, lime juice, and spices into a fresh, versatile dip or topping. Food-processed to your preferred texture, it combines tangy and mildly spicy elements with herbal cilantro and bright lime. Chilling for an hour enhances the flavors. It's suitable for dipping or as an accompaniment to tacos or grilled meats.

Description

The recipe starts by combining canned whole tomatoes drained, canned ROTEL (tomatoes with green chiles), roughly chopped onion and garlic, seeded and sliced jalapeño, loosely packed cilantro, lime juice, salt, sugar, and ground cumin in a food processor. The mixture is pulsed 8 to 10 times, but consistency can be adjusted for chunkier or smoother salsa.

Refrigerating the salsa for at least one hour before serving allows the flavors to meld. The salsa stores well in an airtight container in the refrigerator for up to two weeks, making it practical for use over multiple meals or parties. ROTEL can be substituted with equal parts canned diced tomatoes and green chiles if unavailable.

This salsa complements tortilla chips and can be served alongside Mexican dishes or grilled foods where a fresh, mildly spicy condiment is desired. Care should be taken to process in batches if your food processor is small since the recipe quantity is large.

  • 28 ounce whole tomato canned drained
  • 2 ounce ROTEL canned
  • ½ onion roughly chopped, small
  • 1 clove garlic roughly chopped
  • 1 jalapeño seeds removed and thinly sliced
  • ½ cup cilantro loosely packed
  • ½ lime juiced
  • ¼ teaspoon salt
  • ¼ teaspoon granulated sugar
  • ¼ teaspoon cumin ground

Instructions

  1. Add all ingredients to a food processor. Pulse until it reaches your desired consistency (less for a chunkier salsa, more for a thinner one - my salsa pictured above was 8 to 10 pulses). 
  2. Refrigerate for at least one hour, then serve with your favorite tortilla chips. This salsa can be stored in an airtight container in the refrigerator for up to 2 weeks.

Notes

  • Use canned diced tomatoes and green chiles as a substitute if ROTEL is unavailable.
  • Process in batches if your food processor capacity is less than 11 cups.
  • Store salsa in an airtight container in the fridge for up to two weeks.
