Easy Homemade Vegetable Beef Soup
Description
This soup begins by searing sirloin steak pieces in olive oil to develop a rich meat flavor. Aromatics including onion, celery, bell pepper, carrots, and garlic are sautéed until softened, layering flavor. Potatoes, Italian seasoning, beef stock, diced tomatoes, tomato sauce, and Worcestershire sauce are added to build a savory, tomato-infused broth complemented by herbs.
The soup simmers until meat and potatoes are tender. Fresh or frozen green beans and corn added near the end bring a burst of color and sweetness. Seasoning with salt and pepper allows customization of taste. Garnishing with fresh parsley adds brightness before serving.
The recipe suggests flexibility with ingredients, permitting substitution of beef or vegetables according to preference. Storage and nutritional notes emphasize variability. This soup offers a satisfying meal with a hearty texture from tender meat and vegetables immersed in a flavorful broth.
