  • 1 sweet onion diced
  • 2 celery sliced, stalks
  • 1 bell pepper chopped
  • 2 Medium carrot peeled and sliced
  • 2-3 garlic pressed, cloves
  • 1 Tsp Italian seasoning
  • 2 Large potato diced into small pieces
  • 6 Cups beef stock low sodium
  • 1 oz diced tomatoes with juice, canned
  • 1 oz tomato sauce canned
  • 1 Tbsp Worcestershire sauce
  • 1 Cup Green bean fresh or frozen, chopped
  • 1 Cup corn fresh or frozen
  • salt to taste
  • black pepper to taste
  • 2 Tbsp parsley to garnish, chopped

Instructions

  1. Heat oil in a large stockpot over medium-high heat. Add cubed steak and cook, stirring frequently, for about 2-3 minutes.
  2. Add in onion, celery, carrots, bell pepper, and garlic, and sauté for about 4-5 minutes, or until veggies soften.
  3. Stir in potatoes, Italian seasoning, broth, diced tomatoes, tomato sauce, and Worcestershire sauce.
