Easy Homemade White Gravy is a creamy sauce made by cooking butter with flour until golden, then gradually whisking in milk until thickened. Description

This white gravy begins by melting butter in a saucepan, then stirring in flour to form a roux cooked to a golden brown, building flavor and thickening power. Milk is added slowly in portions while whisking continuously to create a smooth, thickened sauce without lumps. Black pepper and salt season the gravy at the start and again after thickening to balance the taste.

After simmering to achieve a glossy texture, heavy cream is incorporated to enrich the sauce’s body and mouthfeel. The resulting gravy is thick yet pourable, with a mild peppery finish. It pairs well with fried or roasted meats, biscuits, and hearty dishes needing a creamy complement.

Adjustments to thickness can be made by adding more milk if a thinner consistency is preferred. Final seasoning should be tasted and adjusted to personal preference, as butter saltiness can vary.

  • 2 tablespoon butter - or fat from cooking your meat
  • 2 tablespoon all-purpose flour
  • 1 ½ cup milk
  • 1 teaspoon black pepper - see note 1
  • ½ teaspoon salt - see note 1
  • 2 tablespoon heavy cream
  • salt additional, to taste
  • black pepper additional, to taste

Instructions

  1. Melt the butter in a small saucepan over low heat.
  2. Stir in the flour and cook for 3-4 minutes until well combined and a good golden brown.
  3. Whisk in ¼ cup of the milk, the mixture will become a very thick paste. Gradually whisk in ¼ cup more milk. Once the mixture has thinned slightly you can gradually whisk in the remaining 1 cup of milk. (see note 2)
  4. Add the salt and pepper.
  5. Bring to a low simmer and cook for 2-3 minutes until thickened and glossy.
  6. Add the heavy cream, taste and season with additional salt and pepper as needed.

Notes

  • Taste the gravy after finishing and add additional salt and pepper as needed to suit your preference.
  • To achieve a thinner gravy, gradually add ¼ to ½ cup more milk until desired consistency is reached.
