Ingredients

for the salad

  • 8 oz frozen edamame cooked
  • 1 (15 oz) can corn fresh or frozen works too
  • 3-4 sweet peppers any color, chopped
  • 1 Jalapeno pepper ribs and seeds removed, diced
  • 1 small red onion chopped
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 1 cup garlic stuffed green olives sliced
  • 1 cup crumbled feta or queso fresco
  • 2 tbsp fresh cilantro or parsley

for the vinaigrette

  • ¼ apple cider vinegar
  • 2 tsp crushed or ground red pepper more for heat
  • 1 tbsp honey more for sweetness
  • 1 lime juiced
  • ½ olive oil
  • salt and pepper to taste

Instructions

  1. Chop vegetables and cook edamame according to package instructions; let it cool completely.
  2. In a large bowl, combine all salad ingredients and season with salt and pepper to taste.
  3. Prepare the dressing: In a small bowl or jar with a lid, combine the apple cider vinegar, crushed or ground red pepper, honey, lime juice, salt, and pepper to taste. Whisk or shake until well combined. Gradually add the olive oil while whisking continuously (or shaking) until the dressing is emulsified.
  4. Assemble the salad: Combine the cooled edamame with the other salad ingredients. Pour the vinaigrette over the salad and toss gently to combine. Season with salt and pepper to taste.
  5. Serve: Serve the salad chilled or at room temperature; it can be a great side dish or a light main course. Enjoy!
