This easy and delicious hot honey chopped salad is packed with fresh vegetables, plant powered protein, and unbelievably yummy sweet and spicy vinaigrette to top. Every holiday season, this vibrant salad finds its place on our table.

Ingredients
for the salad
- 8 oz edamame cooked, frozen
- 1 (15 oz) can corn fresh or frozen works too
- 3-4 sweet pepper any color, chopped
- 1 jalapeno pepper ribs and seeds removed, diced
- 1 small red onion chopped
- 1 cup cherry tomato halved
- 1 avocado diced
- 1 cup green olives sliced, garlic stuffed
- 1 cup feta cheese crumbled, or queso fresco
- 2 tbsp cilantro or parsley
for the vinaigrette
- ¼ apple cider vinegar
- 2 tsp crushed red pepper more for heat, or ground red pepper
- 1 tbsp honey more for sweetness
- 1 lime juiced
- ½ olive oil
- salt to taste
- black pepper to taste
Instructions
- Chop vegetables and cook edamame according to package instructions; let it cool completely.
- In a large bowl, combine all salad ingredients and season with salt and pepper to taste.
- Prepare the dressing: In a small bowl or jar with a lid, combine the apple cider vinegar, crushed or ground red pepper, honey, lime juice, salt, and pepper to taste. Whisk or shake until well combined. Gradually add the olive oil while whisking continuously (or shaking) until the dressing is emulsified.
- Assemble the salad: Combine the cooled edamame with the other salad ingredients. Pour the vinaigrette over the salad and toss gently to combine. Season with salt and pepper to taste.
- Serve: Serve the salad chilled or at room temperature; it can be a great side dish or a light main course. Enjoy!
