  • ½ cup butter unsalted, 1 stick
  • ½ cup half-and-half or milk

Instructions

  1. Wash potatoes, peel, and cut in quarters.
  2. Place potatoes in the inner insert of an Instant Pot and add water or broth.
  3. Add 2 teaspoons of salt. Place lid on the Instant Pot and put the valve in the seal position.
  4. Cook on steam or manual setting for 12 minutes.
  5. Carefully release the steam when the timer beeps, and remove the lid.
  6. Potatoes should be fork tender. Mash with a potato masher or hand blender.
  7. In a microwave safe dish or on the stove top in a small pan melt the butter and sour cream together.
  8. Add seasonings to the potatoes and the warmed butter sour cream mixture.
  9. Blend until well combined. Gradually add additional milk until the desired consistency is reached.
  10. Serve with additional toppings; chives, parsley, butter, bacon bits or cheese.
