This Italian sub salad is perfect if you love a classic Italian sandwich but don’t want all the carbs. It’s a healthy, gluten free alternative and jam packed with fresh ingredients and so much flavor!

Ingredients
- 2-3 romaine lettuce chopped, hearts or iceberg lettuce
- ½ pound salami chopped, slices
- 5 oz pepperoni cut into bites
- ½ pound provolone cheese chopped, slices
- 1 cup mozzarella cheese mini balls
- ½ cup banana pepper rings
- ½ small red onion chopped
- ½ cucumber sliced
- salt to taste
- black pepper to taste
- Italian dressing for serving, preferred
Instructions
- Prepare romaine lettuce, meats, cheeses, and veggies to be chopped
- Into a large bowl or 4 individual serving bowls, add the romaine lettuce and top with meats, cheeses, and veggies. Season with salt and pepper to taste; serve with Italian dressing.
