Easy Keto Breakfast Casserole

This Keto Breakfast Casserole combines eggs, ham, cheddar cheese, red bell pepper, and onion into a baked dish that sets firm and holds a fluffy, cheesy texture. The savory flavors from ham and cheese with the freshness of bell pepper and onion make it suitable for a protein-rich breakfast or brunch option that is baked to a golden finish.

Description

The casserole is prepared by beating whole eggs with heavy cream, salt, and pepper until fluffy. Diced ham, chopped red bell pepper, minced onion, and a portion of shredded cheddar are folded in before baking. The mixture is poured into a greased casserole dish and topped with remaining cheese.

Baked at 350°F for about 25 to 30 minutes, the eggs set into a firm yet tender texture with a golden bubbly cheese crust. The inclusion of vegetables adds mild sweetness and moisture, balancing the richness of ham and cheese. The layering of ingredients forms a cohesive dish with varied flavors and a substantial mouthfeel.

This casserole is well suited for those following a ketogenic diet or anyone seeking a hearty, savory breakfast. It can be cut into portions and served warm, either on its own or with a side of leafy greens for contrast.

  • 2 cups cheddar cheese divided, shredded
  • cup heavy cream
  • ½ cup red bell pepper seeded, ribs removed and chopped
  • ¼ cup onion minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 350F.
  2. Add in the eggs, heavy cream, salt and pepper into a large mixing bowl and mix using a hand mixer for about 2 minutes, until combined and fluffy.
  3. Stir in the ham, peppers, onions and a little less than half of the shredded cheese.
  4. Pour the mixture into a 9" x 13" casserole baking dish that’s been sprayed with nonstick spray. Top with the remaining cheese and bake for 25-30 minutes or until the eggs have set and the cheese is golden and bubbly. Mine took exactly 30 minutes.
