Easy Kimchi Fried Rice with Bacon (Kimchi Bokkeumbap)

This Kimchi Fried Rice recipe blends savory bacon, fermented kimchi, and cooked rice into a stir-fried dish with Korean chili paste and sesame flavors. The process crisps the bacon and softens kimchi and onion, while tossing rice thoroughly avoids clumps. Toasted sesame seeds and a drizzle of sesame oil enrich the nutty aroma. Fried eggs on top complete a hearty meal perfect for using leftover rice and kimchi.

Description

Easy Kimchi Fried Rice with Bacon, or Kimchi Bokkeumbap, involves cooking chopped bacon until crisp and sautéing onion in rendered bacon fat. Chopped fermented kimchi is added and cooked until tender, then combined with Korean chili paste, kimchi juice, and cooked rice. Stirring thoroughly separates rice grains and incorporates all ingredients evenly. Sesame oil and toasted sesame seeds finish the dish, contributing a nutty, aromatic quality.

After mixing, the rice is cooked over medium heat with occasional searing to develop some crispiness on the bottom—an appreciated textural contrast in the dish. Seasoning with salt and pepper adjusts to taste, while crumbled roasted seaweed adds umami and texture. Fried eggs served sunny side up on top enrich the meal with creamy yolks.

This recipe makes effective use of kimchi’s tangy, spicy profile and the smoky bacon flavor, providing a flavorful and filling dish often enjoyed as a quick meal or leftover transformation.

Ingredients

Servings
  • 1 1/2 cups (360 ml) kimchi chopped, fermented sour cabbage
  • 1/2 onion chopped
  • 4-6 Bacon chopped, strips
  • 2-3 tbsp kimchi juice
  • 3 cups (720 ml) rice cooked
  • 2 tsp gochujang Korean chili paste
  • 2 tsp sesame oil
  • 2 tsp sesame seeds toasted
  • salt to taste
  • black pepper to taste
  • 1 package Roasted seaweed crumbled
  • 4 egg fried to sunny side up

Instructions

  1. In a heavy skillet, cook bacon pieces until crisp. Transfer the bacon to a platter, and set aside. Using a paper towel, wipe off the bacon grease remained in the skillet but leave 1 tablespoonful.
  2. Saute onion in the reserved bacon grease until soft and tender over medium heat. Add the kimchi and continue to saute until kimchi is soft, about 5 minutes over medium-low heat, then add Korean chili paste and kimchi juice to the skillet and mix well to incorporate with kimchi and onion.
  3. Add the rice to the mixture and toss well. Try to separate the rice grains by using the vertical edge of spatula so that you don't smash the rice much.
  4. Add sesame oil and sesame seeds, and toss well. Season with salt and pepper as you wish.
  5. Raise the heat to medium heat and let the fried rice to sear for 2-3 minutes. This will help the rice on the bottom of skillet to be crisp. Adjust the heat, if needed, so that you don't burn it too much. Check the bottom of the fried rice to see it created desired crispness on the rice.
  6. Remove the skillet from the heat and sprinkle with the reserved bacon pieces and crumbled roasted seaweed. To serve, add sunny side up fried eggs on top. Enjoy while hot!
