Easy Lemon Icing

Easy Lemon Icing mixes powdered sugar, lemon and vanilla extracts, fresh lemon juice, milk, and a pinch of salt into a smooth, slightly thin glaze. The icing's tangy lemon flavor is balanced by vanilla's warmth while the texture allows it to spread easily and set with a light crust. It can be tinted with gel food coloring for decorative effects. Designed to frost about 60 medium-size cookies, this icing complements baked goods needing a bright, lemony finish.

Description

Easy Lemon Icing combines powdered sugar with kosher salt, lemon and vanilla extracts, freshly squeezed lemon juice, and milk to achieve a smooth consistency suitable for glazing cookies or cakes. The icing is slightly thin to allow easy spreading and effective coverage without clumping. Gel food coloring can be added to create various hues for seasonal or themed decorations. The lemon juice contributes a fresh tartness that cuts through the sweetness, and the vanilla extract adds depth.

This icing yields enough to frost approximately 60 average-sized cookies, making it suitable for larger batches. It can be mixed ahead and refrigerated, then brought back to room temperature and stirred before use. If too runny, adding a bit more powdered sugar will thicken without making the icing overly sweet. The finished icing dries with a light set on the surface, retaining its lemony zing.
