Easy Lemon Quick Bread

Easy Lemon Quick Bread is a moist, tender loaf flavored with fresh lemon juice and peel, balanced by a sweet sugar glaze. The recipe uses basic baking ingredients like butter, sugar, eggs, and baking powder to create a soft crumb topped with a bright lemon glaze, making it suitable for breakfast or as a light dessert.

Description

Easy Lemon Quick Bread starts by creaming softened butter and sugar until fluffy, then incorporating eggs, lemon juice, and grated lemon peel for a fresh citrus flavor. Dry ingredients—flour, baking powder, and salt—are blended separately and gently mixed with the wet base along with milk to form the batter.

The batter is poured into loaf pans—either a standard 8x4 inch or smaller mini pans—and baked at 350°F until cooked through, about 35 to 45 minutes depending on pan size. A sugar and lemon juice glaze is prepared and drizzled on the warm bread, adding sweetness and a glossy finish.

The bread offers a soft, moist texture with a balanced lemon tang from the juice and zest, making it suitable for snacking or serving alongside tea or coffee. Cooling before slicing helps the glaze set and the flavors meld.
