Easy Lentil Soup
Description
Easy Lentil Soup starts by sautéing onions to soften and develop sweetness, then adds grated carrots, red lentils, vegetable stock, milk, and ground cumin. The mixture is brought to a boil and simmered until the lentils are tender. Pureeing the soup yields a creamy texture without cream, relying instead on the natural starches and the added milk for body.
The flavor is subtly spiced with cumin, which complements the earthiness of the lentils and the sweetness of the carrots and onions. Adding fresh parsley, extra cumin, or chili flakes as toppings provides a fresh or spicy contrast based on preference.
This soup is practical to prepare and can be adjusted for thickness by adding water. It's a satisfying, plant-based soup that works well on its own or with a side of bread for a simple meal.
Ingredients
- 1 tablespoon olive oil
- 1 onion chopped
- 4 carrot coarsely grated, medium
- ¾ cup red lentils uncooked, 140g, dried
- 4 cups vegetable stock 1 litre, broth
- ½ cup milk or dairy free vegan milk, 100ml
- 1 teaspoon cumin ground
To serve (optional)

Instructions
- Heat the oil in a large pot over a medium heat. Add the onion and cook for 3 minutes until softened.
- Stir in the carrots, lentils, stock, milk and cumin, then bring to a boil.
- Reduce the heat and simmer for 15 minutes or until the lentils are cooked.
- Puree with a hand held blender or food processor. Add more water to thin, if desired.
- Ladle the soup into bowls and optionally serve with chopped fresh parsley and mixed seeds.
