  • 1 red onion
  • ¼ cup white wine vinegar

  • 2 tablespoons olive oil
  • 1-2 teaspoons sugar optional, or sweetener of your choice
  • 1 teaspoon salt
  • black pepper to taste

Instructions

  1. Combine the vinegar, lemon juice, oil, sugar, salt and pepper in a bowl and whisk together.
  2. Peel the cucumbers then halve lengthwise. Scoop out the seeds then slice into ½cm slices. Add the cucumber to the bowl with the dressing.
  3. Peel and thinly slice the red onion and place in a bowl with the cucumber.
  4. Toss the salad to combine.
  5. Allow to marinated for at least 15 minutes but up to an hour in the fridge before serving.
