Easy Marinated Tomatoes

This delicious easy Marinated Tomatoes recipe is so flavorful, you are going to want to make it all the time. Served as a side dish, it is perfect during the hot summer months when you want something light and refreshing.

Ingredients

HERE'S WHAT YOU NEED:

  • 2 pounds cherry tomato red - orange - yellow
  • 1 red onion sliced Chiffonade style, medium
  • 1/2 cup basil - chopped
  • 1/2 cup balsamic vinegar
  • 1/4 cup rice wine vinegar
  • 1/4 cup olive oil
  • 1 Tablespoon garlic minced
  • 1 Tablespoon lemon juice
  • 1 1/2 Tablespoons brown sugar
  • garlic salt - to taste
  • pepper to taste, seasoned
  • 1/2 teaspoon oregano ground

Instructions

  1. Wash the Cherry tomatoes, and drain them on paper towels.
  2. Cut the tomatoes in half, and place them in a large bowl.
  3. Peel the red onion, and slice chiffonade style, and add to tomatoes.
  4. Wash and chop the fresh Basil.
  5. Add the minced garlic, and toss all together.
  6. Blend the Balsamic Vinegar, riced wine vinegar, Olive oil, lemon juice, brown sugar, and Oregano, and pour over tomato relish.
  7. Sprinkle with garlic salt, and seasoned pepper, and toss well to mix.
  8. Place the tomato relish in small individual glass containers, and serve at each place setting.
  9. Can also be served in small dishes, or family style. Enjoy!
