Easy Meatball Recipe

This recipe yields tender baked meatballs made from a mixture of ground beef, egg, milk, breadcrumbs, and seasonings including garlic and onion powder. Baking the meatballs gently cooks them through, while the added milk and egg keep them moist and flavorful. The simple seasoning provides a mild, savory flavor perfect for serving with sauce or as part of a main dish. The recipe also offers instructions for cooking in a crockpot and freezing for later use, making it practical for meal prep.

Description

The Easy Meatball Recipe uses ground beef mixed with egg, milk, grated Parmesan, breadcrumbs, and seasoning powders to form flavorful and moist meatballs. The inclusion of milk and egg binds the meat while keeping the texture tender after baking. These meatballs bake at a high temperature to develop a cooked exterior without drying out. Their mild seasoning with garlic and onion powders, salt, and pepper allows flexibility to pair with different sauces.

The recipe includes options for cooking the meatballs in a slow cooker with sauce for hours, allowing flavors to meld and providing convenience. Browning beforehand can create a crust to prevent falling apart. They also freeze well after baking, either raw or cooked, and can be reheated directly in sauces or soups, which is handy for batch cooking or quick meals.

This versatility makes the meatballs suitable for a family meal, party appetizer, or addition to pasta dishes. They can be sized as desired and served hot with your preferred sauce.

When using cream-based sauces, fully defrost frozen meatballs before adding to maintain sauce consistency. Careful mixing avoids overworking the meat, which preserves tenderness.

Ingredients

Servings
  • 2 pounds ground beef I use 80/20
  • 2 egg
  • 1 cup milk
  • 2 tablespoons Parmesan Cheese grated
  • ½ cup plain breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt seasoning salt or garlic salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 450°F. Line 2 rimmed baking sheets (baking pans will work if you don't have rimmed cookie sheets) with foil and set aside.
  2. Place all ingredients into a large bowl and gently mix with your hands, careful not to overmix. Just squish it all together a few times to combine.
  3. Using a cookie scoop or your hands, divide the meat mixture into desired-size meatballs. As long as they are uniform, they can be as large or small as you like.
  4. Bake in the preheated oven for 10-14 minutes, depending on the size. Be sure to check for doneness. Serve hot with your favorite sauce.

Notes

  • Crockpot cooking: Add raw meatballs with sauce and cook low 6-8 hours or high 4-6 hours, browning first helps prevent crumbling.
  • For freezing: Cool baked meatballs, remove excess fat, then store airtight in freezer-safe containers.
  • From frozen: Defrost in fridge or add directly to soups or sauces; fully defrost before adding to cream-based sauces.
