  • 1 1/2 pounds ground beef
  • 1 egg
  • 1 onion about 1/2 cup, chopped
  • 2 garlic minced, cloves
  • 1 cup bread crumbs old fashioned rolled oats, bread crumbs or ground pork rinds for low carb version
  • 1/3 cup milk
  • 1 teaspoon salt to taste
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 cups barbecue sauce divided, your favorite, prepared

Instructions

  1. Pre-heat over to 350 degrees.
  2. In a large bowl, combine beef, onion, garlic, bread or oats, milk, egg and seasonings. Mix well.
  3. Add 1/2 cup barbecue sauce and mix thoroughly.
  4. Form meat into muffin pan. Bake for 20 minutes. After 10 minutes top with additional bbq sauce.

Notes

  • Meatloaf muffins can be layered with mashed potatoes or mac 'n cheese by placing the filling in the bottom third of the pan, topping with meat mixture before baking.
