Easy Meatloaf Recipe
Description
This easy meatloaf recipe uses 1 1/2 pounds of ground beef combined with chopped onion, minced garlic, an egg, bread crumbs (or alternates like oats or ground pork rinds), milk, and seasoning including salt, pepper, garlic powder, and onion powder. The mixture is combined with half the barbecue sauce, then shaped into portions in a muffin pan.
The meatloaf muffins bake at 350°F for 20 minutes. After 10 minutes of baking, additional barbecue sauce is spread on top for extra flavor and moisture. This technique ensures the meat remains tender while gaining a saucy glaze. The result is a well-seasoned, savory individual meatloaf with a balance of spices and tang from the barbecue sauce.
These muffins are convenient for portion control and can be served with mashed potatoes or vegetables for a complete meal. The recipe lends itself to variations in protein, such as ground turkey or chicken, and can be layered with fillings like mashed potatoes or macaroni and cheese within the pan before baking.
The recipe uses basic ingredients for a nostalgic meatloaf flavor and can be adapted for dietary preferences by switching the meat or breadcrumbs.
