Easy Mexican Horchata
Description
Easy Mexican Horchata features white rice soaked in water for several hours to soften the grains before blending the mixture with evaporated milk, regular milk, sugar, vanilla extract, and ground cinnamon. This method yields a milky drink with subtle natural starch sweetness and warm cinnamon notes characteristic of horchata.
The inclusion of evaporated milk contributes to a creamier texture and richer flavor, while the sugar balances the mild rice flavor. Blending the soaked rice and mixture until smooth produces a slightly thick, smooth beverage served chilled or over ice. For those who prefer a smoother drink, straining the rice solids is optional; blending longer when keeping the rice creates a powdery mouthfeel but more body.
Serving horchata cold refreshes and complements spicy or savory foods but can also be enjoyed alone as a comforting beverage. Adjusting cinnamon and sweetness allows for personal preferences.
The recipe notes suggest that thorough blending is important if not straining the rice to achieve the preferred texture, allowing flexibility in preparation depending on individual taste regarding the rice sediment.
Ingredients
- 1 cup white rice uncooked
- 4 cups water
- 12 ounces evaporated milk
- 1/2 cup milk
- 2/3 cup granulated sugar
- 1 tablespoon vanilla extract
- 2 teaspoons ground cinnamon
Instructions
- Pour the rice and water into a blender. Let soak at room temperature 3 to 4 hours, or up to 12 hours, until rice is softened.
- Strain and reserve the rice infused liquid and discard rice, or keep the rice in the water (see recipe notes).
- Add in the evaporated milk, milk, sugar, vanilla extract, and ground cinnamon in with the rice and water.
- Blend on high until completely smooth. Serve chilled or over ice.
Notes
- Straining the horchata is optional; unstrained horchata has a thicker texture with mild rice sediment.
- If you keep the rice in the drink, blend for at least 2 minutes to minimize graininess.
