Easy Mexican Mole Sauce

Easy Mexican Mole Sauce is a smooth, richly flavored sauce made by blending dried ancho chiles softened in hot water with fire-roasted tomatoes, onion, garlic, honey, salt, melted semi-sweet chocolate chips, and creamy peanut butter. This sauce balances mild heat, sweetness, and depth from the chocolate and peanut butter. It can be prepared in advance and served over enchiladas, burritos, or eggs for a versatile addition to Mexican-inspired dishes.

Description

Easy Mexican Mole Sauce combines the warm, smoky flavor of softened ancho chiles with the freshness of fire-roasted tomatoes and sweet onion. The blend is enhanced by the sweetness of honey and the richness of melted semi-sweet chocolate chips and creamy peanut butter, which add depth and a smooth texture. The sauce is blended until thoroughly smooth, yielding about four cups of mole that can be refrigerated for later use.

The flavor profile of this mole sauce strikes a balance between mild heat from the dried chiles and subtle sweetness from honey and chocolate, resulting in a velvety sauce that complements a variety of dishes. The use of peanut butter introduces a slightly nutty note and creamy consistency uncommon in many mole sauces.

Serve this mole sauce over enchiladas to add moisture and flavor or drizzle it on burritos and fried or scrambled eggs for added complexity. Because the sauce is made in advance and stored in the fridge, it offers convenience for quick meal enhancements.
