Easy Mushroom Gravy

Easy Mushroom Gravy uses sliced mushrooms, finely diced onions, and garlic sautéed in butter to create a savory base. Flour thickens the mixture, while optional red wine adds depth. Beef broth is incorporated gradually for a rich, smooth consistency. This gravy is hearty with the earthy flavor of mushrooms and has a balanced texture suitable to serve over meats or side dishes.

Description

This mushroom gravy recipe begins by cooking mushrooms and onions in butter until tender. Garlic is added and cooked until fragrant, followed by red wine if using, which is reduced to concentrate flavor. Flour is stirred in to thicken the mixture and combined with salt and pepper. Beef broth is added gradually while stirring to ensure a smooth texture and desired thickness. The gravy is simmered briefly to meld the flavors and finish thickening.

The resulting gravy offers a rich, savory taste with a meaty mushroom base and a velvety texture. It complements roasted or grilled meats, mashed potatoes, or vegetable dishes, enhancing them without overpowering.

Notes suggest adding broth slowly to prevent lumps and mention that cornstarch can substitute flour for thickening by making a slurry added near the end of cooking. For a creamy variation, a small amount of heavy cream can be stirred in at the end and simmered briefly.

Ingredients

Servings
  • ¾ pound mushrooms sliced
  • ¼ cup onion finely diced
  • 3 tablespoons butter
  • 1 clove garlic minced
  • 2 tablespoons red wine optional
  • 3 tablespoons all-purpose flour
  • salt to taste
  • black pepper to taste
  • 2 to 3 cups beef broth

Instructions

  1. Cook the onions and mushrooms in butter until tender. Add garlic and cook until fragrant. Add wine and cook until evaporated.
  2. Add flour & salt & pepper to taste. Cook 1 minute.
  3. Add broth, a bit at a time stirring after each addition until gravy reaches desired thickness.
  4. Simmer 2 minutes. Season and serve.

Notes

  • Add broth gradually, stirring continuously to maintain a smooth gravy texture.
  • Use a cornstarch slurry instead of flour by mixing equal parts cornstarch and water, adding slowly until thickened.
  • For a creamy mushroom gravy, stir in about ¼ cup heavy cream and simmer for a few minutes before serving.
