Description

This recipe begins by sautéing sliced cremini mushrooms in butter until they develop caramelized edges, enriching their natural earthy flavor. After removing the mushrooms, diced onions are cooked with salt, black pepper, thyme, and additional butter until golden brown, establishing a flavorful base.

Minced garlic and the sautéed mushrooms return to the pot for a brief cook before adding raw rice and broth. The rice simmers covered over low heat until fully tender, absorbing the broth's flavor and the savory mushroom and herb notes.

  • 3 tablespoons butter , divided
  • 1 pound cremini mushroom sliced
  • 1 yellow onion , diced
  • 2 cloves garlic , minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper coarse ground
  • 1/2 teaspoon thyme or 1 teaspoon fresh thyme, dried
  • 2 cups rice
  • 4 cups vegetable broth or beef broth

Instructions

  1. In a heavy bottomed pot add 2 tablespoons of butter and the mushrooms.
  2. Cook on medium high for 3-5 minutes or until they start to caramelize.
  3. Stir and cook an additional 3 minutes.
  4. Remove the mushrooms.
  5. Add in the onions, salt, pepper and thyme along with the last tablespoon of butter and cook on medium for 3-5 minutes or until they start to turn golden brown.
  6. Add in the garlic and mushrooms, then stir and cook for 1 minute.
  7. Add in the rice and broth.
  8. Bring to a boil, then reduce to low heat and cook covered for 18-20 minutes.
  9. Leave covered for an additional 10 minutes before serving.
