Easy Overnight Breakfast Casserole
Description
The Easy Overnight Breakfast Casserole starts by browning ground breakfast sausage with onions, draining excess fat, and setting it aside. A custard mixture is made by whisking eggs with kosher salt, garlic powder, black pepper, and milk. Cubed French and Italian breads are added and gently coated in this egg mixture to absorb moisture evenly.
Cheddar cheese is folded in along with the sausage mixture before pouring everything into a greased baking dish. Covered tightly with foil, the dish chills overnight allowing the bread cubes to soak up flavors and the cheese to blend with the savory sausage and seasonings.
Baking at 350°F with foil keeps moisture in while the casserole sets; uncovering near the end lets the cheese on top brown nicely, creating a golden crust. The result is a cohesive, rich casserole suitable for a filling brunch or breakfast gathering. Garnishing with fresh parsley adds some brightness for serving.
Ingredients
- 1 lb breakfast sausage ground
- 1 onion chopped, medium
- 6 egg large
- 1 tsp kosher salt
- ½ to 1 tsp garlic powder
- ¼ tsp black pepper freshly ground
- 2 cups milk I use whole
- 4 cups French loaf packed, cubed
- 4 cups Italian loaf packed, cubed
- 2 cups cheddar cheese plus 1/2 cup more for topping, sharp
- parsley chopped, for garnish, optional
Instructions
- In a large heavy skillet, cook and break apart/crumble sausage with onions over medium high heat. Once evenly browned, drain and set aside.
- In a bowl, add eggs and beat lightly. Add salt, garlic powder, pepper, and milk. Whisk together to combine well. Add bread cubes and gently stir to coat well. Add cheese and gently fold to incorporate.
- Grease a 9x13 baking dish. Pour egg/sausage mixture evenly into dish, ensuring edges are evenly covered as well. Cover tightly with foil and chill overnight.
- Remove casserole from fridge and let sit at room temp while you preheat oven to 350F with rack on lower middle position. Keeping casserole covered with foil, bake about 50-60 minutes or until center is set. Uncover and sprinkle 1/2 cup more cheese evenly on top; bake 10-15 minutes more or until top is golden brown. Garnish with chopped parsley if desired.
