  • 2 lbs lamb rib chops small
  • 4 garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp rosemary chopped, fresh
  • 1 tbsp salt adjust to taste
  • 1/2 tbsp black pepper adjust to taste

Instructions

  1. In a small bowl, combine the finely chopped garlic with the oil, rosemary, salt and pepper.
  2. Coat the sides of the lamb chops with the garlic mixture. Cover with plastic wrap and let them marinate in the fridge for at least 30 minutes (up to 5 hours).
  3. Preheat your skillet on high heat. Remove all the seasoning from the lamb chops (to prevent them from burning). Sear them for about four minutes on each side, or until your preferred doneness.
  4. Remove the chops from the skillet and garnish with rosemary. Serve with your favorite sides.
