Easy pasta al limone with shrimp

Ingredients

Servings
  • 500 g (1lb) pasta
  • 500 g (1lb) Shrimp peeled and deveined, or prawns
  • 2 tsp olive oil
  • 1 tsp salt

For the lemon pasta sauce

  • 2 tbsp butter
  • 2 garlic crushed, cloves
  • 1 cup cream
  • 1-2 lemon juiced and zested, plural
  • salt to taste
  • black pepper to taste
  • ½ cup Parmesan Cheese grated
  • parsley to serve

Instructions

  1. Place a large pot of salted water over medium-high heat then allow to boil.
  2. Add the pasta to the pot of water and cook until al dente - 8-10 minutes depending on the shape. The pasta should be pleasant to eat: soft but firm.
  3. Once cooked, reserve a cup of the pasta cooking water then drain the pasta.
  4. Peel and devein the shrimp then pat dry with paper towels.
  5. Add to a medium bowl then drizzle over a teaspoon of olive oil and season generously with salt.
  6. Heat a large skillet or frying pan over medium heat.
  7. Add the shrimp and allow to sear for a minute per side then remove and set aside.
  8. In the same pan, melt butter or add a few tablespoons of olive oil.
  9. Add the garlic and and cook for a minute until fragrant.
  10. Pour in the cream, lemon juice (to taste) and lemon zest and season.
  11. Allow to simmer for a few minutes until the sauce has thickened slightly and coats the back of a spoon easily.
  12. Tip the drained pasta and shrimp into the lemon sauce and add a splash of the reserved pasta water.
  13. Stir to coat in the sauce, adding more pasta water if necessary.
  14. Add a generous amount of grated cheese, toss and serve garnished with fresh parsley.
