Description
This recipe starts with peeling, pitting, and dicing fresh peaches, which are then pulsed in a blender or food processor to a preferred consistency. Mixing in lemon juice and an adjustable amount of sugar or sugar-free sweetener balances sweetness and aids preservation. The low sugar pectin is dissolved in water, boiled briefly to activate thickening properties, then stirred into the peach mixture.
Vanilla adds subtle flavor depth. The jam is packed into jars, leaving space for expansion during freezing. It sets with a fresh, bright peach taste and spreadable texture. It is stored at room temperature until cool, then refrigerated or frozen.
This jam works well on toast, biscuits, or as a topping for yogurt and desserts, providing a fresher alternative to store-bought varieties with controlled sugar content.
Sanitizing jars and lids with hot soapy water before filling ensures safety and quality. The jam keeps up to 3 weeks refrigerated or up to a year frozen when properly stored.
Ingredients
- 6 peach about 2 pounds, fresh
- 1 lemon juiced
- 1/2-1 cup granulated sugar add to taste, or sugar-free alternative sweetener
- 3 tablespoons low sugar pectin
- 1 cup water
- 1 teaspoon vanilla
Instructions
- Pit, peel and dice peaches.
- Place in a food processor or blender and pulse to the desired consistency.
- Put in a large bowl and add lemon juice and sugar. If your fruit is very sweet, then you may use less than a cup of sugar. Adjust to your taste.
- In a small sauce pan add water and gently add the low or no-sugar pectin (I used Ball brand) and stir until completely dissolved. Bring to a full boil while continuing to stir. Bring to a rolling, hard boil and cook for 1 minute. Pour into prepared peach mixture and stir until well incorporated (2-3 minutes).
- Add in vanilla.
- Pour into prepared 8 ounce jars leaving some space at the top so the jam can expand during freezing.
- Cover with lids and keep at room temperature until cool. Store in the refrigerator or freezer .
Notes
- Wash jars and lids thoroughly with hot soapy water before filling the jam for best storage hygiene.
- Use low-sugar pectin specifically for this recipe to achieve proper gelation with reduced sugar.
- Store the jam in the refrigerator for up to 3 weeks or freeze for up to one year for longer shelf life.
