Easy Peach Overnight Oats

Wake up to a jar full of these Peach Overnight Oats that are easy to meal prep ahead of time for a quick on-the-go breakfast, a healthy after-school snack, or even dessert. You'll get all the flavors of a cobbler with this recipe, loaded with fresh peaches, cinnamon spice, honey, and vanilla yogurt.

Ingredients

  • ¼ cup pecans coarsely chopped
  • 2 cups peach finely diced, fresh, peeled
  • ¼ cup honey divided
  • 1 tsp. lemon juice fresh
  • tsp. cinnamon
  • tsp. nutmeg
  • 2 cups oats old-fashioned rolled oats, gluten-free
  • 2 cups milk almond, cashew, or soy milk
  • 1 tsp. vanilla
  • 5 oz. yogurt plain or vanilla, container

Instructions

  1. Toast pecans in a large skillet or sauce pan over medium-low heat for 4-5 minutes.  Set aside.
  2. Add peeled and diced peaches to the saucepan over medium heat along with 1 tablespoon of honey and ¼ teaspoon cinnamon.
  3. Saute for 4-5 minutes or until peaches are tender.
  4. Turn off heat and stir in lemon juice.
  5. Mix together oats, milk, 1 teaspoon vanilla, and ⅛ teaspoon of cinnamon and nutmeg in a large bowl.
  6. Divide the oats evenly between four jars.
  7. Add a little more than 1 ounce of yogurt to each jar.
  8. Distribute equal amounts of the peach mixture to each jar.
  9. Refrigerate for at least 2 hours or up to overnight before serving with toasted pecans.

Notes

  • You can also use frozen or canned peaches.
  • Substitute with pure maple syrup or agave nectar and a dairy-free yogurt if vegan.
  • To prep and store: Overnight oats will last in the refrigerator for up to 3-4 days in a sealed container.  But please know, the texture begins to get a little mushier with each day and they are best if enjoyed within the first 24 hours. If you would like to have that delicious texture every morning of the week, do not add the milk to the jar until the night before serving.
  • To freeze: I would not recommend freezing overnight oats.  The texture of the oats will not be the same and instead will be too watery.
