Easy Peanut Butter Cookies
Description
The Easy Peanut Butter Cookies recipe starts with creaming peanut butter and butter to a smooth mixture, then incorporates sugars and eggs to create a light, fluffy dough. Flour, baking soda, and salt are mixed in just until combined to avoid overworking the dough. Baking at 350°F for 8 to 10 minutes yields cookies that hold their shape with a subtle glossy center, characteristic of a tender interior. Pressing the cookie dough balls with a fork creates the classic crosshatch pattern and ensures even baking.
This recipe results in a batch of cookies that are soft yet have a slightly crisp edge, making them good for enjoying on their own or with milk. The peanut butter flavor is prominent but balanced by the sweetness of both brown and granulated sugars, adding depth to the taste and texture.
The instructions advise letting the cookies cool on the baking sheet before transferring them to an airtight container, helping them set properly and retain moisture over storage.
Ingredients
- ¾ cup peanut butter not natural, creamy
- ¾ cup butter room temperature, unsalted
- 1 cup granulated sugar
- 1 cup brown sugar packed
- 2 egg
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
Instructions
- In a large bowl with an electric mixer (a paddle attachment on a stand mixer works best for this recipe), beat peanut butter and butter until smooth.
- Add sugars and beat on high speed until light and fluffy, about 2-3 minutes.
- Add eggs and vanilla and beat on low speed until combined.
- Add flour (fluffed and leveled!), baking soda and salt and beat on low speed just until cookie dough comes together.
- Preheat oven to 350°F and line 3 baking sheets with parchment paper.
- Roll into 1" balls and place 2" apart on baking sheets. Press down slightly with fork.
- Bake for 8-10 minutes, just until set (a slight glossy sheen in the very center is okay). Remove and let cool on baking sheets before moving to an air tight container to store.
