Easy Peasy Bread Sauce
Description
To prepare the sauce, milk is gently heated with aromatic whole spices and onion quarters to extract flavors, then left covered off heat for extended infusion. After straining out solids, white bread torn into chunks is added to the spiced milk and simmered until the bread dissolves and thickens the sauce to the desired consistency. Nutmeg and salt adjust seasoning.
The resulting sauce has a creamy, velvety texture with gentle warmth from the spices and subtle onion sweetness, making it a classic condiment for roasted chicken, turkey, or duck. It enhances the savory meat with moist, mild flavor contrast.
The sauce can be made ahead and refrigerated or frozen, reheated gently with a bit of milk added to loosen it up if necessary. Optional enrichment with cream or butter before serving provides a richer mouthfeel.
Ingredients
- 500 ml milk
- 1 onion cut into quarters
- 10 cloves
- 3 bay leaf
- 8 peppercorns
- ¼ teaspoon nutmeg
- 100 g white bread torn into rough chunks, without crusts
- ¼ teaspoon salt (or to taste)
Instructions
- Put the milk, onion quarters, cloves, bay leaves, peppercorns and nutmeg into a small saucepan. Place over a low heat and allow to come up to almost boiling (about 10 – 15 minutes).
- Turn the burner off and pop a lid on your pan. Allow the milk to sit there and infuse with the flavours for at least 30 minutes or up to an hour. (The longer you leave it, the stronger the flavour.)
- Next, strain the milk through a sieve into a clean saucepan and add the roughly torn bread and salt.
- Bring the bread sauce back up to the boil, then turn it down to a gentle simmer. Simmer for 15 minutes or until the bread sauce is reduced to your preferred thickness.
- Serve with roast chicken, turkey or duck.
Notes
- Make the sauce ahead and store in the refrigerator or freezer for convenience.
- Reheat gently with a splash of milk to restore creamy consistency.
