Easy Peasy Pilau Rice
Description
This pilau rice recipe starts by slowly melting butter in a saucepan, where sliced onion, a cinnamon stick, bashed cardamom pods, cloves, turmeric, salt, and bay leaves are cooked over low heat until the onions become very soft but remain pale. The uncooked basmati rice is stirred in to coat each grain with the fragrant onion and spices. Boiling water is added, and the mixture returns to a boil before being covered and simmered gently to absorb the liquid. Once cooked, the heat is turned off and the rice is left steaming with the lid on to finish cooking evenly.
The pilau rice has a light, fluffy texture with aromatic notes from the whole spices and turmeric. The gentle cooking of onions imparts a mild sweetness without overpowering the dish. This rice works perfectly as a side for dishes like Lamb Rogan Josh or other richly spiced curries, providing a scented base that complements strong flavors.
Measure ingredients carefully to ensure the rice cooks properly and avoid browning the onions for the best result.
Ingredients
- 25 g butter (you can use ghee or 2 tablespoons of olive oil, if you prefer)
- 1 white onion sliced, large
- 3 cm cinnamon stick
- 4 cardamom pods bashed
- 2 cloves
- 1 teaspoon Turmeric ground
- ½ teaspoon salt
- 2 bay leaf
- 300 g basmati rice
- 600 ml water boiling
Instructions
- Melt the butter very gently in a medium-sized saucepan. Add the sliced onion, cinnamon, bashed cardamom pods, cloves, turmeric, salt and bay leaves. Cover with a lid and cook on a low heat for 5-10 minutes until the onions are very soft but not brown, stirring occasionally.
- Add in the basmati rice and stir to coat the rice in the onions and spices.
- Pour in 600ml boiling water and bring back to the boil. Cover with a lid and turn the heat right down. Continue cooking for 8 minutes or until all the water is absorbed.
- Turn the heat off completely (take the saucepan off the burner if you are using electric), but leave the lid on. Allow the rice to steam for 5 minutes.
