  • cucumber grated and most of the moisture squeezed out, roughly 150g/5oz
  • 8 tablespoons Greek yogurt
  • 1 garlic crushed or grated, clove
  • 2 tablespoons mint chopped finely (plus extra for garnish, fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. Start by grating the cucumber on the coarse side of your grater onto a rimmed board, plate or bowl and then squeeze the grated cucumber over the board (or plate/bowl) to get rid of as much of the moisture as you can.
  2. Put the squeezed cucumber in a new bowl and add the yogurt, garlic and chopped mint, plus salt and pepper to taste.
  3. Stir everything together and then cover the tzatziki (with clingfilm, foil or a plate) and put it into the fridge until you are ready to serve.
  4. When you are ready to serve, give the tzatziki a stir and garnish with more fresh mint

Notes

  • For best flavor, chill the tzatziki several hours after mixing to allow flavors to blend and garlic to mellow.
  • Prepare the dip in advance and refrigerate while cooking other dishes to enhance taste and convenience.
