Easy Pizza Pot Pie
Description
The dish starts by cooking ground beef, red bell pepper, and onion in a skillet, draining excess fat. Marinara sauce and mini pepperoni are stirred in, then the mixture is poured into a baking dish. Shredded mozzarella cheese is sprinkled over the top followed by an even layer of mini biscuit dough pieces.
Baking at 350°F for about 25-30 minutes allows the biscuit topping to become golden and fully cooked while the filling bubbles underneath. Covering with foil midway through can prevent premature browning of the biscuits, especially with larger biscuit sizes.
This pot pie adapts well to smaller portions by halving ingredients. The mini biscuits cook faster and yield a consistent biscuit topping. The dish combines familiar pizza flavors in a hearty casserole format suitable for casual meals.
Ingredients
- 1 lb. ground beef
- 1 red bell pepper finely diced
- ½ cup onion I like to use frozen diced onion so that I don't have to chop it!, finely diced
- 1 marinara sauce 24 ounce jar
- ½ cup mini pepperoni I just use mini pepperoni so that I don't even have to chop them, but regular diced pepperoni works fine too!
- 1 cup mozzarella cheese shredded
- 2 refrigerated biscuits 6 ounce cans miniature (e.g. Pillsbury Grands! Juniors) or 16 ounce can buttermilk biscuits
Instructions
- Brown ground beef, pepper, and onion in a large skillet over medium-high heat until no longer pink. Drain.
- Add marinara and pepperoni to the skillet; stir to combine. Pour into 9-inch x 13-inch baking dish. Top with shredded cheese.
- Separate the dough into 10 mini biscuits. Place biscuits evenly on top of the cheese.
- Bake at 350F (180C) for 25-30 minutes, or until biscuits are golden brown and cooked through. Check on the casserole about halfway through the baking time. If the biscuits start to get too brown before they are completely cooked through, just cover the casserole with foil and continue to bake (covered) until done.
Notes
- Using mini biscuits speeds cooking and helps biscuits fully cook without burning.
- If using larger biscuits, cover the casserole with foil halfway to prevent over-browning and extend baking time if needed.
- To serve smaller portions, halve all ingredients and bake in an 8-inch square pan with the same instructions.
