Description
This Easy Pomegranate Compote combines fresh or frozen pomegranate seeds with sugar and orange juice. The mixture is brought to a boil and then simmered, stirring to prevent sticking, for about 10 minutes total until it naturally thickens. The heat activates the fruit’s natural pectin, resulting in a syrupy consistency once cooled.
The final compote provides a sweet and tangy flavor profile from the balance of pomegranate’s tartness and added sugar, brightened by the fresh citrus juice. It can complement sweet dishes by adding vibrant color and fruity notes.
Common uses include spooning atop vegan waffles, drizzling over pancakes, pairing with French toast, or adding a fruity dollop to cheesecake. The compote is versatile enough to be served warm or cold and keeps refrigerated for several days or frozen for longer storage.
For a thicker consistency, a small amount of cornstarch slurry can be added during cooking, but the compote will naturally thicken upon cooling.

Ingredients
- 1 cup pomegranate seeds arils; frozen or fresh
- 3 tablespoons sugar
- 1 tablespoon orange juice
Instructions
- Add the pomegranate arils/seeds, sugar and orange juice to a pot, stir and bring to the boil. Allow it to boil gently for about 5 minutes, stirring often.
- Reduce the heat to low and let it simmer and bubble for a further 5 minutes.Note: The pomegranate compote will thicken further as it cools.
- Serve warm or allow to cool and store in a sterilised jar in the fridge for up to 5 days (or freeze for up to 2 months).
